Okay, so here is one of our new favorite recipes. I will admit that taste is not the only reason it is a favorite - I love that it takes almost no time at all and then it cooks all day and dinner is ready whenever!<br />

We usually double the recipe because then we can eat it for several days, but it works just fine in these portions.<br />
<br />
-3-4 chicken breasts, these can be frozen or fresh just make sure they are boneless<br />
-about 4 cups of salsa (I never measure so this a guesstimate), I always use Pace Picante, we like medium heat but mild works great too<br />
-1 green bell pepper diced up<br />
-1 red bell pepper diced up<br />
-1/2 an onion diced up<br />

Place the chicken in the bottom of the crock pot. Cover with salsa (this is where we estimate). Throw the pepper and onion on the top. Cover and place on low for 8 hours, or high for at least 4 hours and then low for 2 or more hours. This can sit on low for up to at least 10 hours (it could probably go longer, but that is the longest I have left it). If you want it to be chunkier then don't dice your veggies as fine. When it is done then just use two forks to pull and shred the chicken, by this point it almost falls apart. We just eat on tortillas with sour cream, cheese, and guacamole. I made the <a href="http://rousselyumyums.blogspot.com/2010/08/cream-puffs-with-cream-cheesenutella.html">same cream puff recipe </a>as below, except I made mini cream puffs, which turned out to be the perfect size. I made two recipes of cream puffs, so this is enough filling for that many minis...if you want to make less you will need to adjust. I then filled them with the following:<br />

3 cups heavy cream<br />
3/4 cup powdered sugar<br />
pumpkin spice to taste<br />
most of a can of pumpkin puree, to taste (do not use the pie filling)<br />
<br />
1. Place the heavy cream in a bowl and mix with an electric mixer until it starts to get thick, about 1 minute.<br />
2. Mix in powdered sugar and pumpkin spice. Mix until soft peaks start to form, about 3 minutes.<br />
3. Use a spatula to gently fold in and mix the pumpkin. <br />
4. Place in decorating back with round tip and fill the puffs.<br />
5. (Optional) Sprinkle tops with powdered sugar and pumpkin spice.<br />

1/2 Cup Butter<br />
1/8 teaspoon salt (although if you are using salted butter sticks you can skip this and you won't really notice)<br />
1 Cup All-Purpose Flower<br />

1: Preheat oven to 400 degrees. Grease a baking sheet.<br />
2: In medium saucepan combine the water (*tip - measure water carefully), butter, and salt. Bring to boiling. (*tip - add flour as soon as it boils, if you wait the water will evaporate and it won't mix right) Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball. <br />
3: Remove from heat. Cool for 10 minutes (*tip - set a timer, you want to be as close to 10 minutes as possible). <br />
4: Add eggs one at a time (*tip - for best results use large eggs), beating well with a wooden spoon after each addition. <br />
5: Drop 12 heaping tablespoons of dough onto prepared baking sheet.<br />
6: Bake for 30 - 35 minutes or until golden brown and firm; cool. (*note - my oven only needed 30 minutes, so I would set my timer for that and then add time if you need to)<br />

Pour into a bowl. Stir in parmesan cheese. <br /><br />Cook the pasta in a large saucepan with salted boiling water according to the package. Cook until "al dente" or until it offers only a slight resistance when bitten into. not over-cooked or under-done.<br /><br />Just before draining take about 4 Tablespoons of the cooking water and stir into pesto sauce. Drain the pasta and toss with the sauce. You can use more or less pasta sauce to taste. Line cookie sheets with tin foil.<br /><br />In your mixer cream together butter and shortening. Add sugars and beat until fluffy. Add eggs and vanilla, beating well. Add salt and soda and mix well. Add flour and mix until incorporated. Stir in chocolate and heath bars.<br /><br />Drop by ¼ cupfuls, 6 per cookie sheet. Bake for 11-12min. or until very lightly browned. Even though it says chicken it also works great after Thanksgiving with turkey.<br /><br />This is for one 13x9 pan - but it is easily adjusted to different sizes and numbers.<br /><br />-2 Cans of Crescent Rolls- Pillsbury are my favorite. You can get the big, buttery, flaky kind, but they take longer to cook. <br /><br />-Chicken - completely cooked and shredded or in small pieces<br /><br />-Cream of Mushroom Soup, Family Size<br /><br />-Shredded Cheese - I use cheddar, but it is a matter of preference<br /><br />-Milk<br /><br /><br />1. Preheat oven to 350.<br /><br />2. Whisk one can of soup with half a can of milk<br /><br />3. Spread thin layer of soup in 9x13 pan - just enough to cover the bottom. Set the rest of the soup aside.<br /><br />4. Unroll the crescent rolls. Spread each roll out, put small pile of chicken and shredded cheese. Fold the corners over to keep everything inside and then roll up like a normal crescent roll.<br /><br />5. Repeat until you have filled all the rolls.<br /><br />6. Line them up in the pan so they fit best and then poor the remaining soup over the top making sure that everything gets covered.<br /><br />7. Place in oven for approximately 45 minutes. Time will vary based on oven and type of crescent rolls used. If they start looking mostly brown but you still have doughy spots just cover with foil and continue cooking. <br /><br /><br />That's it. Super easy and yummy. They are also really good reheated. They have a really good morning pick me up. It only takes two ingredients and you just make what you need. Mix orange juice concentrate with vanilla yogurt in a blender. If you don't have yogurt you can use ice cream, it just isn't quite as good for you.
